Here we are, in the golden age of the oyster: According to Island Creek Oysters founder and owner Skip Bennett, we have entered "America's oyster renaissance," a time when bivalves are bountiful and demand is high.

August 5 marks National Oyster Day—which might be a curious thing to celebrate in the month of August, considering that it's not a month with "R" in its name. Traditionally, that was considered a time for oyster seekers to steer clear. But you can rest easy: That old chestnut only applies to wild-caught oysters, not the farmed (and rigorously tested) oysters that appear in restaurants.
